Sustainable sourcing and production practices contribute to the growing international appeal of the world’s rarest gem. 

October 12, 2016, Calgary, AB: KORITE, the world’s largest producer of gem-grade ammolite, is expanding its operations and has broken ground on the world’s largest ammolite mine. The opening of the additional land ensures that KORITE will create jobs for direct employment and contractors during Alberta’s difficult job market. It will also ensure that the company is at maximum production levels to meet demand for top-grade, conflict-free, colorful Ammolite.

“To keep pace with the growing popularity of the gemstone and our incredible sales growth, we are excited to announce our expansion plans are now in motion,” says President Jay Maull. “Over the next year we plan to open an additional eight acres of ammolite rich land, re-affirming KORITE is operating the largest mine of its kind in the world.”

The KORITE mine is currently the world’s only operating source of legally mined ammolite. Its current annual production of approximately 6,000,000 carats is set to increase by 2,000,000 carats in 2017.  Opened in 2003, the KORITE SM4 mine has produced more than 42 million carats in its history.

Proudly, the company’s award winning reclamation record continues to set new environmental standards for the industry. KORITE works closely with provincial environmental officials to ensure that the land is restored to its natural state and is improved during the reclamation process. It will continue to set the standard in environmental and ethical mining practices.

The all-day food and drink menu at its Fire & Water Fish and Chop House will launch on Victoria Day Monday, and run until the Queen’s official birthday on 11 June. Steak and Mushroom Pie, Bangers and Mash, Ploughman’s Lunch, and Fish and Chips feature among the British favourites. Traditional English Trifle is offered for dessert, while British theme drink pairings include Pimm’s Cup, Queen’s Favourite Cocktail, ale and cider.
 
“Victoria is a city that celebrates its British heritage like no other city in Canada, so for the Queen’s 90th birthday, we wanted to mark it in some special way,” says Stephen Roughley, General Manager of the Victoria Marriott. “With our Executive Chef, Neil Antolin, newly appointed, a culinary offering made sense. To serve its palette tempting menu, Fire & Water Fish and Chop House benefits from a wealth of local Vancouver Island suppliers. The fresh Ocean Wise approved cod, Yukon Gold potatoes, and ale used in the beer batter of its Fish and Chips are all sourced nearby, while local suppliers like Glenwood Meats and Portofino Bakery, are called upon to help produce its Ploughman’s Lunch featuring roast beef, ham and turkey, with branston pickles, Dijon and grainy mustards, and artisan breads.  Even the trifle features macerated local fruits.
 
“Inspired by fresh and sustainable ingredients, the Queen’s Birthday has allowed us to have some fun and put a West Coast take on a traditional British menu,” says Executive Chef, Neil Antolin. “What better day to launch a British menu than on Victoria Day, a huge day of celebration in our city.”

Alberta’s original craft distillery, Eau Claire Distillery has won at the 2016 San Francisco World Spirits Competition, considered to be the most influential spirits competition in the world.

From more than 1,850 spirits, the largest number in the competition’s 16-year history, Parlour Gin received the Silver Medal in the gin category. The distillery has also won Canada Gin Distillery of the Year at the Berlin International Spirits Competition, where Parlour Gin was also named third overall gin internationally across 22 countries. The San Francisco World Spirits win will be included as one of top medal winners in the May 2016 issue of The Tasting Panel Magazine.
 
One of the most reliable and universal indications of spirits excellence, a San Francisco World Spirits medal has become a recognized affirmation of high quality. The win by Eau Claire Distillery at the prestigious competition conveys Parlour Gin is among the finest spirits in the world.
 
"The San Francisco World Spirits Competition is the most influential in the industry and winning a medal here is very meaningful," says competition director Anthony Dias Blue. "We have the industry's most respected experts serving as judges, and every entry is blind-tasted under highly focused conditions. There is no better way to discern quality and identify trends."

Already a 2015 American Distilling Institute Award winner, Parlour Gin, is a medium gin that derives its flavourful characteristics from Eau Claire Distillery’s unique distillation technique. A recipe of natural botanicals is used to enhance the juniper berry induced dryness and to give it a special exotic nose of flowery essence, Saskatoon berries, rosehips and traditional London Dry style spices.
 
Produced and bottled in the building that once housed Turner Valley’s only movie theatre, Parlour Gin like all Eau Claire spirits, is handcrafted in small batches; its distinguishing character a testament to the traditional artisanal methods and ‘farm-to-glass’ philosophy practised by Eau Claire. Parlour Gin’s name reflects the great history of prohibition-era gin parlours in Turner Valley and throughout the world.
 
“For some time, we were receiving wonderful feedback from customers in Alberta and we thought it would be fun to see where we stood on the world stage,” explains Farran about entering the competitions. “I’m sure glad we did, as we’re now the Canada Gin Distillery of the Year.”
 
A silver medallion from the 2016 San Francisco World Spirits Competition will be added to bottles of Parlour Gin in the coming weeks.
 
As well as Parlour Gin, Eau Claire Distillery produces Three Point Vodka; itself an Alberta Beverage Award winner, and Spring Equinox, a citrus-like clear spirit distilled from prickly pear cactus.  All three can be found in liquor stores across Alberta, and are served in select restaurants and bars, as well as at the distillery’s on-site tasting room.

The team from Ayden Kitchen & Bar is proud to announce the opening of their new restaurant venture, Little Grouse on the Prairie, located in the historic Birks building at 167 3rd Avenue South. The opening day of the restaurant will be February 26, 2016. Little Grouse will be open 6 nights per week, Tuesday – Sunday from 5:30pm until late, and beginning in the summer of 2016 will be offering weekend brunch.

Named in tribute of Saskatchewan’s provincial bird as well as referencing the book/television series Little House on the Prairie, Little Grouse will be a 40 seat Italian restaurant with a design focused on making guests feel like a part of the family. The restaurant is designed by Connie Young of Cece Designs in Calgary, the same designer responsible for Ayden Kitchen & Bar. Utilizing sample palates of floral wallpapering, antique artifacts, vintage frames, and old hutches, Connie has created a space that evokes the feelings of family, comfort, and the rural community.
 
The kitchen is being led by Jesse Zuber, who is moving from his position as Head Chef of Ayden. His menu will focus on traditionally-influenced dishes with a modern style of presentation, featuring a menu created to show Saskatoon best in Italian cuisine. Guests will also get to directly interact with Jesse and his team while they work, as Little Grouse will feature Saskatoon’s first open kitchen eating bar.

0.5oz Chambord
0.5oz cream
Barspoon Maraschino
Barspoon raspberry syrup
Dash cardamom bitters
Dash green strawberry bitters
Whole egg

Garnished with macaroon & raspberry on skewer

Directions
1. Add all ingredients together, dry shake well
2. Add ice and wet shake
3. Pour using a strainer into a Nic & Nora Glass
4. Add Garnish of raspberry and macaroon on a skewer, place on the rim of drink.

Celebrants set for the festive season means a stocked bar for downtime and entertaining, and a completed checklist with special gifts matched to the people who matter most. Holiday preparations are a quick, easy and impactful wrap thanks to Eau Claire Distillery. Alberta’s first craft distiller announces the launch of a new limited edition seasonal offering, Christmas Gin and the return of its 2014 sell-out success Gin Rummy. 

In homage to the Magi, Christmas Gin combines the flavourful botanicals of frankincense and myrrh in a classic dry gin for golden results. Meantime, the distillery’s take on a classic, Gin Rummy is a glorious tribute to two traditional spirits, mixing the distinguished tastes of juniper gin and special rum, with winter spices. This festive season, the pioneering distillery also offers a ‘Holiday Spirits’ gift box, tastefully made of birch wood and featuring its applauded signature spirits, Three Point Vodka and Parlour Gin. 

“What could be more Christmassy than a gin that pays respect to the legendary Three Wise Men?” says Eau Claire Distillery President and Founder, David Farran. “As gifts in ancient times, frankincense and myrrh were priceless. With Christmas Gin, you can witness the birth of a new Eau Claire tradition with a Canadian twist and miraculous flavor.”

The milky sap of the Boswellia tree, frankincense has a unique amphora taste. Myrrh has a long history as a tonic ingredient, and was mentioned in ancient texts of Egyptian lore and biblical accounts. 

“Combine the balsamic, lemony flavor of frankincense with the bitter, aromatic spiciness of myrrh with our classic dry gin, and you have pure gold,” says Farran.

Making a welcome return for the holidays, Gin Rummy is crafted to conjure feelings of warmth and comfort. Designed for those who come together to enjoy festive social occasions, it has a unique and delicious elixir, and a flavour reminiscent of spiced Christmas cake, making it the ideal festive libation. 

“Sip it with ice by the fire, warm it up for a hot drink by the curling rink, or mix it for a heart-warming round of cards with friends,” says Farran. 

The Gin Rummy bottle depicts a social scene of refined gentlemen and ladies playing cards, each with an animal head: bear, Canadian goose, beaver, wolf and moose. The imagery nods to the brand’s strap lines “wherever social animals roam”. A playing card attached to the bottle features the image of a moose as the king of hearts and allows for a greeting to be written on the reverse, making Gin Rummy the perfect Christmas gift.

Vancouver Project Set to Influence World Architecture

Vancouver House, developed by Vancouver-based firm, Westbank, and designed by BIG (Bjarke Ingels Group) has won Future Project of the Year at the World Architecture Festival (WAF) 2015,  the world's largest international architectural event.


More than 2,000 architects and designers from around the world gathered in Singapore, November 4 - 6, for the Festival which celebrates the world’s most innovative developments. This is a double award for Vancouver House; first taking Future Project – Residential Category, followed by being named the over-all winner in the Future Category by  WAF’s “Super Jury.” Vancouver House was selected from a pool of 12 Future Project category winners, drawn from 331 shortlisted Future entries from around the world, all of whom exhibited at WAF 2015.
 
“Bjarke Ingels’ architecture represents an evolutionary moment in Vancouver’s design history,” said Ian Gillespie, President of Westbank. “This is an incredibly prestigious win for Vancouver House and for Vancouver; it recognizes our vision for city-building. Every city needs to have a few special moments that take your breath away, and Vancouver has lacked that until now.”
 
Bjarke Ingels said, "Vancouver House is incredibly ambitious both socially in turning the Granville Bridge overpass into an urban canopy and architecturally in providing the well tested Vancouver urbanism of slender residential towers on podiums with a fresh interpretation with the expanding tower emerging from its urban village. To receive this endorsement from the World Architecture Festival is incredibly encouraging now that we are in the midst of realising this new Vancouver community."

World Architecture Festival judges selected the project, stating it "Mitigates the destructive impact of the highway fly-over on infrastructure and urban form, and generates an exemplar new urban typology. It is a delightful project that will impact positively on many future municipality- and developer-led agendas for cities across the world."
 
In Vancouver, Leslie Van Duzer, Professor at the University of British Columbia’s School of Architecture and Landscape Architecture, said. “Vancouver House represents the confluence of an enlightened planner, a visionary developer and an architect who makes a practice of turning society’s detritus (in this case, a site with sprawling off-ramps) into gold. Such rare alchemy is most worthy of this significant global prize. Vancouver, long known for its exemplary urban planning, may yet earn a sustained place on the world stage for its architecture."
 
Developed by Vancouver-based development firm, Westbank and designed by BIG (Bjarke Ingels Group), Vancouver House is now actively under construction at 1460 Howe Street, in the city’s downtown core. Vancouver House’s innovative design makes it appear to twist from a 560 square metre (6,000 square foot) narrow base into a 1,300 square metre (14,000 square foot) rectangular tower, rising 59-storeys above Beach Avenue at the foot of Howe Street.  Its pioneering design is in response to its proximity to the north end of Granville Street Bridge and adjacent buildings.  Vancouver House is set to become one of the tallest buildings on the city’s skyline at 156 metres (512 feet) with 375 individual residential homes, and includes the creation of an urban village at the tower’s base, complete with offices, retail, rental apartments, restaurants and outdoor spaces; all of which  will create and define the new Beach District neighbourhood.
 
Westbank and BIG have three projects under development in Canada. In addition to Vancouver House, there is TELUS Sky in Calgary, Alberta in partnership with TELUS and Allied Properties REIT slated for completion in 2018 and a recently announced project on King Street West in Toronto, Ontario, also in partnership with Allied Properties REIT.
